Gundam is a term designating any mobile suit built from gundanium alloy. Gundam also tend to be exceptional units, more advanced than most other mobile suits of their time.

In Gundam Seed, Gundam is an acronym for "General Unilateral Neuro-Link Dispersive Autonomic Maneuver." It is unknown if that's the case in the other series.
